30ml Little Biddy Gin – Classic
15ml Amaro Montenegro
15ml Marsala, or Rosso Vermouth
15ml Fresh lemon juice
5ml Simple syrup
1 Egg white
½ tsp Activated charcoal
Method
Dry shake all ingredients to emulsify egg white. Shake with ice. Double strain into chilled coupe.
Garnish
Sprinkle with freeze-dried raspberry powder.
